Easy Peasy Chicken Skewers

I am not too sure you can even call this a recipe as it is basically just putting ingredients together and popping under the grill!

Food is always better when it is pleasing on the eye, and the array of colours which I used on this meal certainly meant it looked pretty as well as tasting amazing.

I marinated my chicken for about 4-5 hours to ensure the flavours really sank in and developed, however if you don’t have the preparation time to do this it won’t make too much of a difference to be honest! I used chicken, but you could swap out for fish, steak, homemade meatballs or even some chunks of halloumi if you would like, I know how popular that cheese is with a lot of people at the moment.

These would also be perfect for a BBQ if you made them in advance and kept in the fridge until ready to use. I served mine with just a simple salad and green veg. A really high volume meal full of flavour.

Ingredients (makes 3 skewers, enough for one portion)
100g Chicken
Smoked Paprika
Ground Cumin
Cayenne Pepper
Salt and Pepper
FryLight
80g Courgette
80g Mixed Peppers
50g Plum Tomatoes
50g Red Onion

Method
Chop the chicken into bite sized chunks, mix with the spices, a squeeze of lemon, cover and leave to marinade for 4-5hours (or as long as you have.)

Pre-heat oven to 200 degrees (fan oven).

Chop the vegetables into bite sized chunks. Then using skewers (make sure you rinse with water first if using wooden ones) alternate between the different vegetables and the chicken, ensuring all skewers are even. Lay on a baking tray, or wire rack would be better and spray with some firelight.

Pop in oven for 20minutes, turning over once halfway through cooking. Check chicken is cooked before serving with your choice of sides!
